Focaccia Bread

Sometimes when I have to throw out the starter discard, I don’t actually throw it out. I don’t like throwing it away so I start a new batch for another bread. This time it was for focaccia. My daughter and I got set in the kitchen to do some focaccia. We were very surprised at the results.

This recipe is from King Arthur Flour.

The discard was given its own container, and it was fed and ready for when M came over. We learned how to knead the bread – well, okay, I learned how to knead the bread as I watched her..

Speaking of kneading, one of the fun kneading processes I learned was the two handed kneading. Imagine you take your right hand, and push the heel of your hand in the dough across your body, and pick the dough up and bring it back. Then you take your left hand and do it again. It was a distraction, really. I didn’t like kneading dough.

We learned something about the oven as the bottom wasn’t quite done. It needed to go centre rack.
